Chef Matteo’s “cucina rustica” has its very roots in the concept of “home”.  In this case, the predominant influence is in his home roots in Liguria.  This tradition is the perfect palate for Chef Matteo’s approach to Maui’s bounty.  Unique on the island, Chef Matteo’s treatment of local seafood and up-country vegetables has created a following of loyal customers.  Each dish is a work of art, with subtle seasoning and a light hand, enhancing and empowering the freshness of its ingredients.
